Hello, friends! It’s Sunday, which is our meal planning and grocery shopping day. James is doing the grocery shopping today, which takes a huge load off me. I was hoping to start a Whole15 this week, but I was pressed for time and too tired to look up Whole30 compliant recipes online after taking Hannah out school shopping in this heat for several hours. So, this is the list that James and I came up with together for the week (I’m hoping to start a Whole15 next week, so feel free to join me for that. I should also mention that this list isn’t necessarily in a particular order):
Sunday: Steak & Mashed Potatoes. We already have leftover steak in our freezer that was never eaten this past week, so we’re trying to use up what we have already. We’re also going to keep it simple and use instant mashed potatoes.
Monday: Stuffed Pepper Soup. James was actually the one who found this recipe and sent it to me, so I’m cooking it per his request! This one is pretty darn healthy, apart from the rice. One of these days I’ll have to share my stuffed pepper recipe with you guys because it’s delicious.
Tuesday: Roasted Chicken & Potatoes. I shared a recipe for this the other week. It’s such an easy and quick recipe to throw together and takes about an hour to bake.
Wednesday: Salisbury Steak Meatballs with Gravy and Mashed Potatoes. James also found this one and insisted we try it. I’m curious to see how it turns out because he plans on making it himself. 😛
Thursday: Tomato Soup and Croutons. I am not sure if I’ll partake in this recipe, or if I’ll make myself some eggs instead, but we already had the tomato soup and croutons in our pantry, so this was James’ idea for a quick and simple “no-fuss” weeknight meal. Yes, canned tomato soup. We’ve made homemade tomato soup before as well, but we’re trying to keep things cheap and convenient this week since we’re on a budget.
Friday: Cheesy chicken Bacon Ranch Casserole. This recipe looks AMAZING. I can’t wait to try it, and as the name would suggest, it isn’t healthy at all… but it looks delicious…
